Humidity requirements for food storage warehouses:

Cold storage


The humidity of fruit and vegetable cold storage should be between 85%-95%; the humidity of meat, dairy products and mixed cold storage should be kept between 75%-85%. If the relative temperature is too high, the food will become slimy, promote the growth of bacteria and accelerate the deterioration of the food; if the relative humidity is too low, it will cause the food to dry out. You can cover the food with a damp cloth or splash water directly on the food.

The freezer should maintain high humidity, otherwise the dry and cold air will absorb ingredients from the food. Frozen food should be wrapped with anti-moisture or anti-evaporation materials to prevent the food from losing moisture and fat from going bad and smelly.


All food warehouses should avoid direct sunlight. Frosted glass should be used for glass windows in warehouses. When selecting artificial lighting, cold light lamps should be selected as much as possible to avoid the increase of the indoor temperature of the warehouse due to the heating of the electric lights.


In addition, the storage warehouse should maintain good ventilation. It is best to change the air in the dry storage room four times per hour. The food in the refrigerator and freezer compartments should not be stored against the wall, and should not be placed directly on the floor or stacked on the ceiling to facilitate air circulation.

a. Dry storage. It is best to control around 10°C, of course, 15°C-22°C is also a generally accepted temperature.   


b. Cold storage. The main function of cold storage is to prevent the growth of bacteria. Bacteria usually multiply the fastest between 10°C-50°, therefore, all refrigerated food must be kept in a cold room below 10°C.   


Because of the different types of food, there are different storage objects and cold storage rooms, and their corresponding cold storage temperatures are also different.   


The cold storage temperature of meat should be between 0°C-2°C;   


The refrigeration temperature of fruits and vegetables should be between 2°C-4°C;   


The refrigeration temperature of dairy products is between 0°C-2°C;   


The best refrigeration temperature for fish should be around 0°C.


Refrigerators that store a variety of foods can only use a compromise solution to adjust the temperature between 2°C and 4°C on average.

c. Freezers. The temperature of the freezer must generally be kept between -18°C and -24°C.
